Easy Pasta & Cheese Quiche
vegetarian / prep time 5 minutes + cooking time of the pasta/ bake time 30-35 minutes
I actually wasn’t thinking of putting this recipe here, but while I made it yesterday and shared it on my IG story, I received several messages regarding it. So I thought it would be wise to have it here for you to grab any time.
This is one of my quick and easy go to dishes I always have in the fridge for my hungry kids. They love it, I mean who doesn’t like pasta with cheese. It is great as a school lunch box option, or just for grabbing when the hunger levels in the house are rising. I usually make a big one, that way it lasts for 2-3 days.
It is of course simple to make, because who has time for complicated, right?! All you have to do is cook the pasta and mix it with all the ingredients (only 4 besides salt and pepper), shove it into the oven and forget about it until done! That’s all!
In this recipe I used Penne pasta, but any pasta can work. I even tried whole wheat pasta a few times, but my kids were not very keen about that. If you want to lower the calories use light cheese options. I used a no fat Greek yogurt here.
Story time
My youngest has a weird love hate relationship with it. He is the one who likes it the most or hates it the most (I never get it right, LOL). He either has it 3 times a day and begs me to make it all the time obsessively or doesn’t want it at all #momslife.
Ingredient for one baking dish 21X32cm / 8X12inch
500gr / 1lb 2oz Pasta, I used penne
3 eggs, large
500gr/ 1lb 2oz Yogurt, I used no fat Greek yogurt
100gr / 4oz Cheese, grated (I used gouda , because that’s what I had in the house)
200gr / 7oz Feta cheese, crumbled
Salt & pepper to taste

Method
Preheat the oven on 180 Celsius / 350 Fahrenheit degrees.
Cook the pasta according to instructions.
Meanwhile, in a bowl mix together all the ingredients: eggs, yogurt, cheese, feta, salt and pepper.
Once ready add the cooked pasta to the mixture and mix well to combine.
Prepare a slightly oiled baking dish. Pour in the pasta mixture. Bake for 30-35 min, depending on your oven, until golden brown.
Enjoy it! It is great with a cut veggie salad and some cream cheese.
